Opportunity
The Senior Sommelier manages the extensive wine program for the Immigrant Restaurant and Riverbend. This role is a key leader responsible for wine education, service standards, and inventory management for the Restaurant.
The Senior Sommelier is expected to:
Act as a leader, wine educator, and role model for all staff. Conduct themselves and hold all other co-workers accountable to the highest service standards set by the Immigrant Restaurant, Riverbend, and the Court of Master Sommeliers. Manage the extensive wine program for the restaurants. Ensure daily standards are met regarding wine service. Perform duties as assigned outside of the Immigrant Restaurant and Riverbend.
SPECIFIC RESPONSIBILITIES
A. Wine Program Development and Management
The Senior Sommelier is responsible for all aspects of the wine list and cellar, including:
Development of the Wine List: Researching wines and conducting tastings within company parameters. Providing recommendations to leadership and ensuring a balanced list is maintained. Building and maintaining a wine list fitting the establishment for the right price, products, presentations, and ease of use. List Maintenance and Communication: Printing, writing, and making changes to all wine lists as needed. Ensuring wine menus reflect the current product. Working closely with the BOH team on menu changes to adequately pair wine with nightly menu and special event menus. Support for Other Outlets: Assisting other outlets with wine list development and changes dependent on need/directives given by F&B Operations Manager. Managing the allocations of special wines for the resort. Assisting outlets in locating wines that have been sold from the Restaurant list in other outlets.
B. Service and Guest Interaction
The Senior Sommelier works the Immigrant Restaurant floor to provide professional service and enhance the guest experience:
Providing professional wine sales assistance. Providing professional wine service, including re-pours. Ensuring proper glassware is used and providing labels upon request. Working with guests to preselect wines for dinners or events they are hosting in the Restaurant. Communicating daily with the Restaurant Manager and/or Dining Supervisor to review reservations and learn about any upcoming reservation regarding wine.
C. Education and Special Events
This role is integral to staff training and generating wine-related revenue opportunities:
Staff Training: . Developing and teaching the Wine Academy for all Food & Beverage staff on a regular basis. Ensuring high-quality service, including basic knowledge, techniques on corking, and servicing, will be demonstrated. Attending and occasionally holding daily briefings with the Restaurant FOH staff before the start of operation Guest Experiences: Developing wine experiences for guests, including small classes, large seminars, and pairing classes. Participating in and teaching specialty classes, seminars, and demonstrations when able. Having intricate workings with Kohler Food & Wine annually.
D. Inventory and Operational Support
Inventory Control: Maintaining accurate inventory. Managing the monthly wine inventory process. Being responsible for putting away purchased wine deliveries. Ensuring all necessary equipment is in stock and in proper order. Maintaining wine cellars for cleanliness, temperature, lighting, etc.. Floor Assistance: During idle times, assisting the staff in one or all the following duties: back waiter, hosting, reservationist, bus, bar service, and polishing. Financial Processing: Processing sales through POS and properly processing payments.
This role is compensated hourly plus commission. This is a Full-Time position with weekend availability required.
